Something different than a hike or outdoors. I sent a picture to family last week about the “situation” I was in – a picture of bacon, fried eggs, and fried red potatoes. The situation was really about how to decide what to eat first, but before i thoroughly worked through the process, I had already stabbed a potato with my fork and popped it in my mouth. Someone wanted to learn how to cook them, so I decided to video the process this morning.
I pulled my Wagner cast iron skillet down and heated it up while I set the GoPro up. I checked the heat several times before it was hot enough to start:
Six more minutes, it was hot enough to begin. I added bacon grease, let it get hot and spread it around, then added the diced potatoes.
It’s important to remember that you want to hear that sizzle when the potatoes hit the skillet. Once they are in, leave them alone. I checked one about six minutes later, but ten minutes won’t hurt. Start flipping them over. Don’t worry about making this flip, or the next ones perfect; the potatoes will still cook through.
Keep waiting 5-10 minutes between flipping. Flip and mix them up every 5 minutes or so; you’ll get plenty of frying time on most sides. You can see in the later videos below the other skillet added to the stove – this was for bacon. I let it heat also before adding oil/grease, letting the grease heat up, then put the bacon in to get that same sizzle to start.
Finally, the potatoes look done to me, so I remove them to a bowl with a paper towel to absorb some of the grease. I didn’t set a timer to record the exact time, but it was close to 30 minutes from the time the potatoes hit the pan until I started taking them out.
Once the potatoes are out, I use the same pan to fry two eggs.
